Macho Nachos {Recipe}



As you can guess, I'm always looking for a recipe to feed a crowd!  Here is one of my family's all time favorites...plus, we always have leftovers to enjoy the next day!!!


Macho Nachos
{Original recipe from The Family Homestead}


Here is my altered version:

3 Cups Dry Pinto Beans
12 Cups Water
1lb. Ground Sausage
1 1/2 Cups Salsa
2 Cups Sour Cream
1/4 Cup Taco Seasoning
1 1/2 Cups Shredded Cheddar Cheese
Sliced Black Olives (Optional)
Sliced Tomatoes
Chives

2-3 Hours before dinner...place your beans and water in a large pot.  (The original recipe calls for salt, but I have found that salt causes dried beans to not soften.) Bring to boil, reduce heat and simmer for 2.5 hours until beans are soft. {In a pinch...you can start your beans as little as an hour ahead, and keep them boiling - watch your water level!  They should be done in time with this method.}  Set aside.

Just before dinner, fry ground sausage, drain grease.  Add salsa and mix.  With a slotted spoon add beans to the sausage (keeping a bit of the liquid with the beans as you add).  Smash beans a bit as you add them.  Pour this mixture into an 11x15 pan.

Mix taco seasoning into sour cream and spread over bean/sausage mixture.

Sprinkle cheddar cheese over the sour cream.  Now add your tomatoes, olives (I'm the only one in my house who likes these), and chives over the top.  Bake at 400 degrees for 20 minutes! 

Serve with tortilla chips!  {Like Crystal of The Family Homestead, we add a big green salad!}

  1. could you do this with black beans or would they cook in a similar way?

    1. I think black beans would work...I've never tried it...the pinto beans give a bit of a pasty texture...I think well cooked black beans would serve the same purpose! Let me know if you try it!

  2. I make this same recipe..well, duh, I'm Mama Cook's daughter, it would be sac religious not to! But I use red beans, and mash them slightly, after pouring them into the bottom of my baking dish. I also have found that chicken works great in this recipe! (I can never get sausage for anything under 2 bucks, so I skip it) Just season your chicken as you would for fajitas (ie, garlic, onion, taco seasoning) and the flavor becomes more robust to rival the sausage version!
    And...if you don't have chips you can make your own! Take a stack of tortillas, brush one side lightly with oil, cut into eighths, spread out on a cookie sheet and bake for 10 mins--or until golden brown--at 350! (You can squeeze a bit of lime juice and a pinch of salt on top for the "hint of lime" version)
    Or simply making it a filling for burritos, or even quartering tortillas and dipping them like pita bread will suffice!

    1. That's my girl! If we hadn't already had them this week, I might try it with Chicken!!! {Sounds so yummy!} Great idea on making your own tortilla chips...you could also skillet fry them if you didn't want to turn on the oven! Mmmmmmm...Mmmmmmmm!
